Before graduating from the United States Personal Chef Institute, Paula started her cooking career in Italy while living abroad. Her fascination with the European way of eating and living...non-processed foods, fresh from the farm produce, and the finest quality meats and seafoods, led her to opening in Phoenix, Arizona "At the End of the Fork", where she taught cooking classes.

From there she traveled to Oklahoma where she owned and chefed for "The Briar Rose Tea Room", a lunch restaurant. The specialities were home-made pies and desserts and freshly baked breads along with daily entree specials.

Paula has lived in the Bulverde-San Antonio, Texas area since 1997, where she has worked for "Dry Comal Creek Vineyard" conducting wine tastings and educating customers on food pairings, as well as owning UPPER CRUST PCS.
